Soups are liquid foods prepared by simmering meats and vegetables in water until the flavors are extracted. Listed below are three hearty and fulfilling soup recipes.

BACON AND CARROT SOUP

You will need:

5 carrots

3 medium potatoes sliced

1 medium onion

2 qt. water

4 slices bacon

2 tablespoons butter

1/2 cup crushed crackers

Salt and pepper

Directions: Fill Large Pot with two quarts water. Combine all vegetable in pot. Cook over medium heat until tender. While soup is cooking, fry bacon until crispy. Then add chopped bacon into soup mixture. Then add butter and season to taste. Add cracker crumbs and simmer for ten minutes.

LIMA BEAN SOUP

You will need:

11/2 cup dried lima beans 2 tablespoons flour

6 cups cold water 1 cup milk

4 carrots diced 1-teaspoon salt

4 tablespoons butter 4 slices of onion

Directions:

Wash lima beans. Cover with cold water. Let stand overnight. Add 6 cups cold water. Cover. Simmer slowly until tender. Then remove beans from heat, mash beans until pulpy. Heat to boiling. Then take frying pan and fry onion and carrots in 4 tablespoons butter for 5 minutes. Remove vegetables. Add flour and salt to hot butter. Stir until browned. Add to boiling bean mixture. Add milk and vegetables and simmer for 10 minutes.

NEW ENGLAND VEGETABLE SOUP

You will need:

Salt and Pepper 5 cups boiling water

1/4-teaspoon celery salt 1/2 cup dices onions

1/2 cup diced turnip 1/4-cup oil

1 cup diced potatoes 1 cup dices tomatoes

1/2 cup diced carrots 1/2 cup shredded cabbage

Directions:

In frying pan, pour 1/4-cup oil and brown onions, tomatoes, carrots, and turnips. Add water to cabbage, celery salt, and potatoes. Season to taste. Cover and simmer until vegetables are tender.

All these recipes are nutritious and tasty.
